Apple Whiskey Bacon Jam with Caramelized Onions and Fuji Apples

Jam Ingredients
  • 1 lb (450g) Thick-cut bacon Chopped into 1/2 inch pieces
  • 2 large Yellow onions Thinly sliced
  • 2 medium Fuji apples Peeled and finely cubed
  • 1/2 cup (120ml) Whiskey Bourbon or Rye
  • 1/4 cup (60ml) Maple syrup Pure maple
  • 1/4 cup (50g) Brown sugar Packed
  • 2 tbsp (30ml) Apple cider vinegar
  • 1 tbsp Fresh thyme leaves Plus extra for garnish
  • 1/2 tsp Kosher salt

  • 1 Large Skillet Heavy-bottomed preferred
  • 1 Slotted Spoon
  • 1 White Ceramic Ramekin For serving

Method
 

Preparation
  1. Place chopped bacon in a cold skillet over medium heat. Cook until crispy and the fat has rendered. Remove with a slotted spoon and set aside, reserving 2 tbsp of fat in the pan.
  2. Add sliced onions to the bacon fat. Reduce heat to medium-low and cook for 15-20 minutes until soft, jammy, and deep amber in color.
  3. Stir in the cubed Fuji apples and cook for 5-7 minutes until they are translucent and softened.
  4. Add whiskey, brown sugar, maple syrup, and vinegar. Scape the bottom of the pan to release the fond. Bring to a simmer.
  5. Return the bacon to the pan. Simmer for 10-15 minutes until the mixture reaches a thick, glossy, mahogany-colored syrupy texture. Stir in fresh thyme at the very end.

Notes

Use a heavy-bottomed pan to prevent scorching the sugars.
The jam will thicken as it cools, so don't let it get too dry on the stove.
