Ingredients
  

The Zucchini Bites
  • 2-3 medium Zucchini Sliced into 1/2-inch rounds
  • 1/2 cup (65g) All-Purpose Flour
  • 2 large Eggs Beaten
  • 1.5 cups (90g) Panko Breadcrumbs
  • 1 tsp (5g) Garlic Powder
  • 1 tsp (5g) Onion Powder
  • 1 tbsp (15ml) Olive Oil In a sprayer/mister
  • 1/2 tsp (3g) Sea Salt Crystals For finishing
Garlic Herb Sauce
  • 1/2 cup (120ml) Greek Yogurt Or sour cream
  • 1 clove Garlic Minced
  • 1 tbsp (15ml) Lemon Juice
  • 1 tbsp (4g) Fresh Herbs Parsley or dill, chopped

Equipment

  • 1 Air Fryer Preheated to 400°F
  • 1 Oil Mister For even coating
  • 3 Shallow Bowls For the dredging station

Method
 

Dredging the Zucchini
  1. Slice zucchini into 1/2-inch rounds and pat dry with paper towels to remove excess moisture.
  2. Place flour in the first bowl, beaten eggs in the second, and panko mixed with garlic/onion powder in the third.
  3. Dip each round into flour, then egg, then press firmly into the panko to ensure a heavy, blistered coating.
Air Frying
  1. Place in a single layer in the air fryer at 400°F (200°C) for 5 minutes.
  2. Open the basket, spray with olive oil for that signature sheen, flip, and spray again. Cook for another 3-5 minutes until golden brown.
  3. Remove and immediately sprinkle with sea salt crystals while hot.

Notes

For the best crunch, do not overcrowd the basket.
Always pat the zucchini dry before breading to prevent the coating from sliding off.
