  • 1 lb (454g) Fresh Broccoli Florets Dry thoroughly for maximum crunch
  • 2 tbsp (30ml) Extra Virgin Olive Oil For the oily sheen and heat conduction
  • 3 cloves Fresh Garlic Finely minced for toasted bits
  • 1 tsp (6g) Coarse Salt Provides visible crystals and crunch
  • 1/2 tsp (1g) Black Pepper Freshly cracked

Equipment

  • 1 Air Fryer Any standard basket or oven-style air fryer.
  • 1 Large Mixing Bowl For tossing broccoli with oil and seasoning.

Method
 

Preparation
  1. Cut the broccoli into uniform florets. Wash thoroughly and dry completely using a towel or salad spinner to ensure no steam during cooking.
  2. In a large bowl, toss the florets with olive oil until they have a slight oily sheen. Add minced garlic, coarse salt, and pepper, tossing to coat the crowns.
Cooking
  1. Preheat air fryer to 390°F (200°C). Place florets in the basket in a single layer. Cook for 8-10 minutes.
  2. Halfway through cooking, shake the basket to ensure even blistered charred dark brown edges develop on all sides.

Notes

Ensure broccoli is bone-dry before adding oil to prevent steaming.
Add fresh lemon juice after cooking for a bright finish.
